Process for the preservation of eggs

Abstract

Solid emulsions of aqueous solutions or in part solutions and in part suspensions of non-electrolytes in mixtures of solid and liquid paraffins or purified neutral lanoline are prepared for coating eggs. The non-electrolytes used may be the ethyl, propyl or other esters of p-hydroxy benzoic acid and may be emulsified with agar agar, gum from carob seeds, or the materials known under the Registered Trade Marks " Emulphor " and " Tylose " and other non-electrolytes having emulsifying properties. The solid emulsion may be prepared by heating to 70-80 DEG C. paraffin wax of m.p. 68-72 DEG C. and liquid paraffin and adding a hot aqueous solution of the emulsifying agent containing the non - electrolyte, the mixture being thoroughly stirred while cooling down gradually until it begins to solidify. The emulsions may be applied as a thin film to untouched or cleaned and disinfected eggs by rubbing over with a cloth or brush, or by a machine.
